How to Cook Pakistani and Indian Biryani  | Cooking Recipe pdf  Book

Biryani is a flavorful and aromatic dish that is popular in both Pakistan and India. Here is a basic recipe for making Pakistani/Indian-style biryani:

Ingredients:

  • 1 1/2 pounds boneless chicken, beef, or lamb, cut into 1-inch pieces
  • 2 cups basmati rice
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 3-4 ripe tomatoes, chopped
  • 2-3 green chili peppers, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • 2-3 cups water or chicken broth
  • 2 tablespoons oil or ghee
  • 2 cups mixed vegetables (optional)
  • 1/2 cup yogurt
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup fried onions
  • 1/2 teaspoon saffron threads (optional)

Instructions:

  1. Heat the oil or ghee in a large saucepan over medium heat. Add the chopped onions and cook until they are golden brown.
  2. Add the minced garlic and grated ginger and cook for 1-2 minutes.
  3. Add the chopped tomatoes and cook until they are soft and the mixture is fragrant.
  4. Add the meat, turmeric powder, cumin powder, coriander powder, garam masala, and salt, and cook until the meat is browned on all sides.
  5. If using vegetables, add them to the saucepan and cook for 2-3 minutes.
  6. In a separate pot, bring the water or chicken broth to a boil. Add the rice and stir to combine. Cover and cook for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. In a large pot or deep casserole dish, spread half of the rice in the bottom. Spoon the meat and vegetable mixture on top of the rice, then spread the remaining rice over the mixture.
  8. Spoon the yogurt over the rice and sprinkle with chopped cilantro.
  9. Sprinkle the fried onions over the top. If using saffron, dissolve the threads in a small amount of warm milk and drizzle over the biryani.
  10. Cover the pot or casserole dish and cook over low heat for 10-15 minutes, or until heated through. Serve hot.
