Zaiqa Cooking Recipe Pdf Book By Khair-un-Nisa Behter
“Zaiqa” is an Urdu word that translates to “flavor” or “taste.” It’s a common term used in Pakistani cooking to describe the blend of spices used in a dish to create its unique flavor profile.
Here is a simple recipe for a traditional Pakistani zaiqa blend:
Ingredients:
- 2 tbsp coriander seeds
- 2 tbsp cumin seeds
- 1 tbsp whole black peppercorns
- 1 tbsp whole cloves
- 1 tbsp whole cardamom pods
- 2 inch cinnamon stick
- 4 dried red chili peppers
- 1 tsp turmeric powder
- 1 tsp dried mango powder (amchur) (optional)
Instructions:
- Toast the coriander seeds, cumin seeds, black peppercorns, cloves, cardamom pods, cinnamon stick, and dried red chili peppers in a dry pan over medium heat until fragrant, about 2-3 minutes.
- Allow the spices to cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
- Mix in the turmeric powder and dried mango powder (if using).
- Store the zaiqa blend in an airtight container in a cool, dry place for up to 6 months.
This zaiqa blend can be used in a variety of Pakistani dishes, such as chicken karahi, biryani, and qeema. Simply add 1-2 tbsp of the blend to your dish for a burst of flavor.
