Chatni, Achar, Jam Jelly, And Murabba Recipes By Sardar Gurmukh Singh Manohar Ambalvi
Here are four simple recipes for traditional Pakistani condiments:
- Chatni: -Ingredients:
- 2 cups chopped mint leaves
- 2 cups chopped cilantro
- 4 medium-sized green chilies
- 1 large garlic clove
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp lemon juice
- 1/2 cup water
-Instructions: 1. In a blender, add mint leaves, cilantro, green chilies, garlic, salt, sugar, lemon juice, and water. 2. Blend everything together until you get a smooth paste. 3. Store the chatni in a clean, airtight container and refrigerate for up to 1 week.
- Achar: -Ingredients:
- 2 medium-sized green mangoes
- 1/2 cup mustard oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp fenugreek seeds
- 1 tsp red chili powder
- 1 tsp salt
- 1 tsp sugar
- 1 tsp turmeric powder
- 1 tsp coriander powder
-Instructions: 1. Wash and peel the mangoes, then cut them into small pieces. 2. In a pan, heat the mustard oil over medium heat. 3. Add the mustard seeds and let them pop, then add the cumin seeds, fennel seeds, and fenugreek seeds. 4. Add the chopped mangoes, red chili powder, salt, sugar, turmeric powder, and coriander powder. 5. Cook until the mangoes are tender and the mixture has thickened about 20-25 minutes. 6. Let the achar cool, then store it in a clean, airtight container and refrigerate for up to 1 month.
- Jam/Jelly: -Ingredients:
- 4 cups fruit (such as strawberries, blueberries, or raspberries)
- 2 cups sugar
- 1 tbsp lemon juice
- 1/4 cup water
-Instructions: 1. Wash and chop the fruit. 2. In a large pot, add the fruit, sugar, lemon juice, and water. 3. Cook over medium heat, stirring frequently, until the fruit has broken down and the mixture has thickened about 30-40 minutes. 4. Test the jam for consistency by placing a small amount on a chilled plate. If it holds its shape, it is done. 5. Let the jam cool, then store it in a clean, airtight container and refrigerate for up to 1 month.
- Murabba: -Ingredients:
- 4 cups chopped fruit (such as mango, peach, or apricot)
- 2 cups sugar
- 2 cups water
- 1 tsp lemon juice
- 1 tsp cardamom powder (optional)
-Instructions: 1. Wash and chop the fruit. 2. In a large pot, add the fruit, sugar, water, lemon juice, and cardamom powder (if using). 3. Cook over medium heat, stirring frequently, until the fruit has become tender and the mixture has thickened,
